I just whipped up this yummy side dish. I'll be making this a lot in the future!
Ingredients
Olive oil
1 yellow squash, diced
Salt
2 tablespoons butter or margarine
2 teaspoons minced garlic
Lemon zest from 1 lemon
1 cup cooked rice
1 cup chickpeas
Juice from half a lemon
1/4 cup chopped parsley
Feta cheese, to taste
Directions
Start by warming a little olive oil in a pan over medium heat. Add the diced squash and sprinkle with salt. Cook for a few minutes until it starts to soften.
Add the butter and let it melt before adding the garlic and lemon zest. Mix it together before adding the chickpeas and rice. Sprinkle again with salt and with pepper. Cook for a few minutes until the liquid has cooked off a bit.
Turn off the heat and then add the parsley and lemon juice. Mix together. Divide into two bowls. Sprinkle with crumbled feta cheese. Goes well with seafood.
Serves 2.
