Fresh tomato chili

 


After struggling with blossom end rot, I'm in the middle of a huge tomato harvest. I've already made pizza sauce and have used tomatoes in some meals. But today I decided to see how garden fresh tomatoes perform in place of canned tomatoes.


Ingredients 

Green bell pepper, diced

Small onion, diced

2 cups diced fresh tomatoes

1.5 cups beans, drained and rinsed

2.5 tablespoons chili mix, use your favorite

1/4 tsp cayenne powder

1/4 tsp sugar

3/4 tsp salt

2 cups diced tomatoes, skins removed if desired 

1 lb meat, cooked (I used Beyond Beef)

1/2 c water

Directions

Warm the oil over medium heat. Add the pepper and onion. Cook for a few minutes until tender. Add the tomatoes and cook until softened and very saucy. 

Add the beans, cooked beef, and spices. Add the water and mix well. Cook until thoroughly warmed and the liquid reduced. Serve with your favorite chili fixings. I like mine with tortilla chips. 

Makes 2-4 servings. 

Final thoughts

This was good! It definitely tastes different than my other batches of chili, which I usually make the same way. The next time i will probably remove the skins first, though, just for better texture. Not necessary, though. Didn't notice them that much.
