Growing up, I didn't like pie. In fact, I did not begin to like any type of pie until I was living in Austin, probably around 2012. The pies I remember from childhood were goopy piles of sugary mess and I didn't care for the texture at all. Apple pie was included in this sentiment! I remember going apple picking with friends and making a pie with the apples we picked. I disliked the pie a lot. I did not make it myself, though, so I really can't say what was in it that I disliked.
Anyway, since starting to eat VEGAN pies, my whole attitude toward pie has changed. I love chocolate pie, pumpkin pie, apple pie, and pecan pie. I have already perfected pumpkin pie to my personal tastes, so I thought apple pie would be the next part of my journey.
I based this recipe on a few different ones. First, my mother's recipe for apple crisp. Second, this Betty Crocker recipe. Why? Well, I know what I like when it comes to apple filling, but I also really want to take advantage of and experiment with baking mixes moving forward. If you watched me make this pie on stream you would have seen how quickly it was assembled. The longest part was the waiting for it to cook. Once I am accustomed to using baking mixes, I intend to make a higher fiber, multigrain mix at home to replace the store bought variety that contain isolated fats. This is part of my mission to bring healthier, easy to make dishes to everyone via my show and blog. Please note, the original crust recipe made just barely enough so I have multiplied the yield to accommodate a larger pie plate.
Ingredients
For the filling:
4 or 5 sweet apples, peeled and cut into slices
1/3 cup brown sugar
1 tablespoon apple pie spice (store bought)
For the crust:
2 cups Bisquick
1/3 cup Earth Balance, softened
4 tablespoons boiling water
For the topping:
1 cup Bisquick
1/2 cup brown sugar
3 tablespoons cold Earth Balance
Directions
Combine the apples, brown sugar, and apple pie spice in a bowl. Toss well to combine. Let sit while you continue.
To make the crust, combine the Bisquick, Earth Balance, and apple pie spice in your pie plate. It's that easy! Mix with your hands, knead until combined, then press into place.
Pour the apple mixture into the crust.
To make the topping, combine the Bisquick, brown sugar, and Earth Balance in a bowl. Mash together with a fork, then sprinkle over the filling.
Bake in a 375 degree oven for 1 hour. Let cool before serving. I mean, if you can't wait just let it cool for about 10 minutes. It'll be a little runny but it'll still be delicious. If it cools it will set and the filling won't run!
Top with whipped cream or vanilla ice cream, if desired.
